After doing the Shrek Blender Rig, I was watching the 3-part film based on the Fungus the Bogeyman Plop up book, I was thinking to myself 'I wonder what if I can make him in the comfort of my own home'. And then I started as soon as I could.

The time it took to make this model alone compared to the Shrek one, didn't take as long as I thought it was going to. This only only took me close to a full day, whereas the Shrek rig took a few months. I think the reasoning for this such obscure time difference is because instead of sculpting like I use to do before then, I started doing box modelling more regularly.
Box modelling basically is you take a subdivided cube, with loop cuts made around the cube, and stretching it without having the need to sculpt and retopologize the already perfect object shape. If you want stuff made quicker and out there with already perfect Topology for the rig, this may be the perfect method for you.
